Multiple old mountainside vineyards. The vineyards in Malaga are the most extreme in all of Europe. The mountainside vineyards are planted at inclinations of 70 degrees. There is no terracing, ladders or mechanisation to assist with the harvest. The vineyards are worked completely by hand.

Primary fermentation takes place in stainless steel tanks using wild yeast. Secondary fermentation takes place in stainless steel tanks following the Charmat method of sparkling wine production.
